  • 4 cloves garlic
  • 1 -2 jalapeños (seeded and chopped)
  • 1 -2 serrano peppers (seeded and chopped)
  • 1/2 teaspoon sugar (optional)
  • 1 tablespoon olive oil
  • 1/3 cup fresh cilantro leaves (loosely packed)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/4 teaspoon cracked pepper (to taste)

Steps

  1. In a food processor or blender, combine the tomatoes, onion, garlic, jalapeños, serrano peppers, and sugar. Pulse several times until the mixture is mostly smooth but still has a bit of texture. This forms the flavorful base of your salsa.

  2. Heat olive oil in a skillet over medium heat. Pour in the blended mixture and cook for about 2 minutes, stirring occasionally, until it begins to boil and the raw flavors mellow. Remove from heat, then stir in the fresh cilantro, ground cumin, and oregano until fully incorporated. Season with salt and cracked black pepper to taste.
