Ingredients

4 servings
  • 1 cup minced fresh pineapple
  • ½ large sweet onion, (minced)
  • ½ large yellow bell pepper, (seeded and minced)
  • ½ large green bell pepper, (seeded and minced)
  • ¼ cup minced fresh cilantro
  • 3 medium limes, (juiced)
  • 1 tablespoon vegetable or canola oil
  • 1½ pounds red snapper filets, (cut into 4 servings)
  • salt and pepper

Steps

  1. In a bowl, combine the pineapple, onion, bell pepper and cilantro. Cover and chill.

  2. In a small bowl, combine the lime juice and the oil. Set aside. Salt and pepper the fish.

  3. Heat and oil your grill. Grill the snapper for approximately 4 to 8 minutes on each side, basting with the lime juice mixture. The fish is done when it flakes easily when tested with a fork and is no longer translucent in the center.
