Red Snapper with Pineapple Salsa
Simply grilled red snapper served with fresh pineapple salsa.

Ingredients
4 servings
- 1 cup minced fresh pineapple
- ½ large sweet onion, (minced)
- ½ large yellow bell pepper, (seeded and minced)
- ½ large green bell pepper, (seeded and minced)
- ¼ cup minced fresh cilantro
- 3 medium limes, (juiced)
- 1 tablespoon vegetable or canola oil
- 1½ pounds red snapper filets, (cut into 4 servings)
- salt and pepper
Steps

In a bowl, combine the pineapple, onion, bell pepper and cilantro. Cover and chill.

In a small bowl, combine the lime juice and the oil. Set aside. Salt and pepper the fish.

Heat and oil your grill. Grill the snapper for approximately 4 to 8 minutes on each side, basting with the lime juice mixture. The fish is done when it flakes easily when tested with a fork and is no longer translucent in the center.
