Ingredients

  • 2 medium red onions, (peeled, halved and slice into half-moons)
  • 1½ cups white vinegar
  • 1 teaspoon sea salt
  • 1 tablespoon granulated white sugar

Steps

  1. Pack the sliced onions into one large 2-pint jar (or two 1-pint jars).

  2. In a medium bowl, whisk together the vinegar, salt and sugar. Whisk until sugar dissolves.

  3. Pour the vinegar mixture over the onions in the jar, submerging the onions. Put the lid on the jar. Shake, and refrigerate for at least one hour and up to 2 weeks.
