Quick Lemon Vinaigrette
The possibilities are endless with this lemon vinaigrette! Mix up an extra big batch and pour over pasta salad, use as a dip or a marinade!

- ¼ cup olive oil (or vegetable oil)
- 2 tablespoons fresh lemon juice
- 1 tablespoon white vinegar
- 2 teaspoons granulated sugar (or to taste)
- 2 teaspoons Dijon mustard
- 1 clove garlic (minced (optional))
- 1 tablespoon fresh herbs (any combination of chives, dill, or parsley)
- salt and pepper to taste
Steps
Combine all ingredients in a jar. Shake well to combine.
Drizzle over salad to taste.
Store in the refrigerator up to one week (if using minced garlic, read notes below).
