Ingredients

  • 1⅓ cups rolled oats (or large flake oats)
  • 2 tablespoons chia seeds
  • 1 cup milk (or non-dairy milk)
  • ⅔ cup vanilla yogurt ( or vanilla Greek yogurt)
  • ⅔ cup pumpkin puree
  • 1¼ teaspoons pumpkin pie spice
  • ½ teaspoon cinnamon
  • ¼ cup brown sugar (maple syrup, or honey, or more to taste)
  • ½ cup chopped pecans (optional)

Steps

  1. In a large bowl, mix together the rolled oats, chia seeds, milk, yogurt, pumpkin puree, pumpkin pie spice, cinnamon, and brown sugar (or maple syrup). Taste and add more sweetener if desired.

  2. Divide the mixture among four small mason jars or small containers. Seal tightly and refrigerate for at least 4 hours, or for best results, allow it to chill overnight.
