Ingredients

4 servings
  • 4 large portobello mushrooms (see note)
  • 2 tablespoons olive oil
  • 2 teaspoons soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic (minced)
  • salt and black pepper (to taste)
  • 3 ounces havarti cheese (sliced)
  • 4 hamburger buns (or brioche buns)
  • toppings (as desired)

Steps

  1. Wipe the mushrooms clean with a damp paper towel and remove and discard the stems. Use a spoon to gently scrape out the gills.

  2. In a large bowl whisk olive oil, soy sauce, Worcestershire sauce, garlic, and salt & pepper to taste. Add the mushrooms and toss well to coat. Let marinate at least 15 minutes.

  3. Preheat the grill to medium-high heat.

  4. Place the mushrooms, gill side down on the grill, and cook for 5 to 7 minutes. Flip the mushrooms over and cook for an additional 4 to 5 minutes or until tender. Add the cheese on top and cook a minute more or until melted.

  5. Place the mushrooms in the buns and add toppings as desired.
