- 1 whole red bell pepper (diced)
- ¼ cup red onion (finely diced)
- 1 whole jalapeño (seeded & minced)
- ½ lime (juiced)
- 3 tablespoons chopped fresh cilantro
- ½ tablespoon olive oil
- ½ teaspoon cumin
- salt (to taste)
Steps
Combine pineapple, peppers, red onion, jalapeno pepper, lime juice, cilantro, olive oil, cumin, and salt in a bowl and gently stir.
Let stand at room temperature for 30 minutes before serving.
