Peach Sorbet
Made with just peaches, lemon juice, sugar, and a pinch of salt, peach sorbet is proof that the simplest recipes are often the best.

Ingredients
- 2 pounds fresh peaches (quartered, pits removed)
- 1 tablespoon fresh lemon juice
- ⅓ cup sugar (adjust to taste)
- ¼ teaspoon kosher salt
Steps

Place the peaches, lemon juice, sugar, and salt in a blender and puree until smooth. Place a fine mesh sieve over a large bowl and pour the mixture through it. Use a wooden spoon or spatula, as needed, to press the mixture through the strainer.

Transfer to your ice cream maker and process according to the manufacturer's instructions. Serve immediately for soft-serve sorbet, or transfer to an airtight container and freeze until ready to serve.
