Peach and Brie Bruschetta

Ingredients

12 servings
  • 2 large peaches, (peeled and finely chopped)
  • 1 large red bell pepper, (finely chopped)
  • ¼ cup chopped green onions
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon granulated white sugar
  • 1 tablespoon freshly squeezed lime juice
  • dash of cayenne pepper
  • 8 ounces baguette, (thinly sliced into 24 slices)
  • 4 ounces chilled brie cheese, (cut into 24 pieces)

Steps

  1. In a medium bowl, combine the peaches, bell pepper, green onions, cilantro, sugar, lime juice and cayenne pepper.

  2. Preheat your oven broiler. Arrange the bread slices in an even layer on a baking sheet. Top each bread slice with 1 piece of cheese; broil 3 minutes or until the cheese melts and the bread is toasted. Remove the pan from the oven.

  3. Top each bread slice with about 1½ tablespoons of the peach salsa. Serve immediately.
