- 2 large peaches, (peeled and finely chopped)
- 1 large red bell pepper, (finely chopped)
- ¼ cup chopped green onions
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon granulated white sugar
- 1 tablespoon freshly squeezed lime juice
- dash of cayenne pepper
- 8 ounces baguette, (thinly sliced into 24 slices)
- 4 ounces chilled brie cheese, (cut into 24 pieces)
Steps
In a medium bowl, combine the peaches, bell pepper, green onions, cilantro, sugar, lime juice and cayenne pepper.
Preheat your oven broiler. Arrange the bread slices in an even layer on a baking sheet. Top each bread slice with 1 piece of cheese; broil 3 minutes or until the cheese melts and the bread is toasted. Remove the pan from the oven.
Top each bread slice with about 1½ tablespoons of the peach salsa. Serve immediately.
