Ingredients

  • 4 pounds yams
  • 2 tablespoons butter, (melted)
  • 1 tablespoon honey
  • 2 medium oranges, (zested and juiced)
  • salt, pepper and nutmeg, (to taste)

Steps

  1. Preheat the oven to 325° F.

  2. Boil the yams in a covered pan of water until tender. Drain; drop in cold water and then slip off the skins. Rinse the cooked yams, chop and put in a large bowl. In a small bowl, whisk together the butter, honey and orange juice/zest. Add to the yams and toss gently.

  3. Spoon into a buttered casserole dish. Sprinkle with salt, pepper and nutmeg. Bake for 30 to 40 minutes, or until golden.
