Ingredients

4 servings
  • 4 boneless skinless chicken breasts
  • salt and pepper to taste
  • 4 tablespoons unsalted melted butter
  • ½ cup Italian bread crumbs
  • ½ cup grated parmesan cheese
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 medium sliced zucchini (sliced)
  • 1 medium sliced yellow squash (sliced)
  • ½ pound quartered baby red potatoes

Steps

  1. Preheat the oven to 350 degrees Fahrenheit. Lightly spray a 13 x 9 x 2-inch baking dish with non-stick cooking spray.

  2. Season 4 boneless skinless chicken breasts with salt and pepper on both sides and set aside.

  3. In a shallow dish add 4 tablespoons unsalted melted butter. In another shallow dish add ½ cup Italian bread crumbs, ½ cup grated parmesan cheese, and ½ teaspoon garlic powder.

  4. Dip each chicken piece into the melted butter and then coat in the parmesan garlic crumbs. Lay the coated chicken in the prepared baking dish.

  5. In a medium-sized bowl add 1 medium sliced zucchini, 1 medium sliced yellow squash, and½ pound quartered baby red potatoes. Toss the vegetables in 2 tablespoons olive oil then add the vegetables to the baking dish.

  6. Bake for 30-40 minutes until chicken is cooked throughout and vegetables are tender.
