Ingredients

  • 4 small boneless skinless chicken breasts (about 5-6 ounces each)
  • 2 cups instant rice (or Minute rice)
  • 1¾ cups reduced sodium chicken broth (or water)
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 cup frozen peas and carrots (optional)
  • ¾ teaspoon onion powder
  • ¾ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Steps

  1. Preheat oven to 375°F and grease a 9x13-inch glass or ceramic baking dish.

  2. Add the rice, broth, condensed soups, and frozen vegetables to the dish. Stir well and spread evenly.

  3. Place the chicken breasts on top, pressing down slightly.

  4. Mix the seasonings and sprinkle over the chicken.

  5. Cover tightly with foil and bake for 45 minutes. Do not peek.

  6. Remove from the oven and let rest, covered for 10 minutes before serving.
