Ingredients

6 servings
  • 4 boneless chicken breasts
  • 2 cups long grain rice
  • 1 (10-ounce) can cream of mushroom soup
  • 1 (10-ounce) can cream of chicken soup
  • 1 (14-ounce) can chicken broth
  • salt and pepper to taste
  • 1 package onion soup mix

Steps

  1. Preheat the oven to 350 degrees Fahrenheit. Spray a 13 x 9 x 2-inch baking dish with nonstick cooking spray.

  2. In a medium-sized bowl, add 2 cups long grain rice, 1 (10-ounce) can cream of mushroom soup , 1 (10-ounce) can cream of chicken soup, and 1 (14-ounce) can chicken broth and stir to combine.  Pour into the prepared baking dish.

  3. Place the 4 boneless chicken breasts on top of the rice mixture and season with salt and pepper to taste . Sprinkle 1 package onion soup mix on top.

  4. Cover the baking dish tightly with aluminum foil. Bake for 1 hour and 15 minutes or until the chicken is cooked through and no longer pink. No Peeking!
