No Bake Butterscotch Bars
No Bake Butterscotch Bars are made with marshmallows, cornflakes, coconut, and butterscotch chips. This easy recipe is perfect for a fast summer treat.

Ingredients
- 8 cups corn flake cereal
- 8 cups miniature marshmallows, (divided)
- 1 (10-ounce) package butterscotch chips, (divided)
- 1 cup toasted coconut
- ½ cup salted butter

Line a 13 x 9 x 2-inch baking pan with parchment paper, leaving a 1-inch overhang on both sides.

Add the cereal, 1 cup mini marshmallows, 1 cup butterscotch chips, and toasted coconut to a large bowl and stir to combine. Set aside.

Add the butter to a large pot and melt over medium heat. Once melted, add the remaining 7 cups of marshmallows and stir until they are coated in butter and are nearly completely melted.

Remove the pot from the heat and stir in the remaining butterscotch chips (about 1 cup) and mix until smooth. Working quickly, pour the melted marshmallow mixture over the cereal mixture and stir until it is completely coated.

Pour the coated cereal mixture into the prepared pan and press it gently into an even layer. Top with additional coconut, if desired. Allow the bars to cool for at least 20 minutes before removing them from the pan and cutting them into bars.
