🟨Nasi Liwet Rice Cooker ▶️ Indonesian Coconut Rice🟥

Ingredients
- 750 g r beras putih
- 1 ltr santan (dari 2 bungkus kecil santan instan (130 ml))
- >>> opsional tambahan air jika diperlukan untuk menanak nasi <<<
- 35 g r teri medan / teri biasa (sudah digoreng)
- 100 g r pete (Opsional)
- 35 g r lengkuas (geprek)
- 30 g r cabai rawit (opsional)
- 1 btg sereh (geprek)
- 5 lmbr daun salam
- 3 lmbr daun pandan (opsional agar lebih wangi)
- 1 sdt garam (saya 1-1 1/2 sdm garam)
- 1 1/2 sdt kaldu jamur
- secukupnya minyak goreng untuk menumis
- 75 g r bawang merah
- 35 g r Bawang putih
- 50 g r Cabai merah besar
- 35 g r Cabai hijau besar
- 750 g r white rice, rinsed
- 1 liter coconut milk75 g shallots
- Optional - you can add a little water if needed for cooking the rice
- 35 g r Fried anchovies
- 100 g r petai (stink beans) – optional
- 35 g r galangal, bruised
- 30 g r bird’s eye chilies – optional
- 1 lemongrass stalk, bruised
- 5 Indonesian bay leaves (daun salam)
- 3 Pandan leaves – optional, for fragrance
- 1 tsp Salt (I am using 1 - 1.5 tbsp Salt)
- 1 1/2 tsp Mushroom seasoning
- Cooking oil, as needed
- 75 g r Shallots
- 35 g r Garlic
- 50 g r Large red chilies
- 35 g r Large green chilies
Steps
🟨Tumis irisan bawang merah dan bawang putih hingga harum 🔸 masukkan lengkuas geprek, sereh geprek, dan daun salam, lalu tumis sebentar ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Heat a little oil in a pan. 🔸Sauté the shallots and garlic until fragrant. 🔸Add bruised galangal, lemongrass, and bay leaves, then cook briefly.
🟨Masukkan irisan cabai merah besar, cabai hijau besar, tumis sebentar. 🔸masukkan pete dan ikan teri, tumis sebentar 🔸masukkan santan, aduk dan masak hingga mendidih. ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Add the large red and green chilies, sauté briefly. 🔸Add petai and fried anchovies, then stir for a short time. 🔸Pour in the coconut milk, stir well, and cook until it begins to boil.
🟨Masukkan beras yang telah dicuci ke dalam rice cooker 🔸 Masukkan hasil tumisan seluruh bahan sebelumnya 🔸 Tambahkan garam, kaldu, dan daun pandan, lalu aduk 🔸🔸 Tambahkan air jika diperlukan <<< ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Place the washed rice into the rice cooker. 🔸Pour in the sautéed coconut mixture along with all the ingredients. 🔸Add salt, mushroom seasoning, and pandan leaves, then mix well. 🔸🔸Add a little water if necessary, depending on your rice cooker.
🟨Masak dengan rice cooker hingga matang, 🔸untuk pertengahan memasak bisa diaduk sesekali ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Cook the rice using the normal rice cooking mode on your rice cooker. 🔸During cooking, you can stir the rice once or twice if needed.
🟨Nasi liwet siap disajikan <3 ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Once fully cooked, fluff the rice gently. 🔸Nasi Liwet is ready to serve.
🟨NB* : Awalnya saya hanya memakai 1 liter hasil air santan, tetapi rice cooker saya tidak mau berjalan dipertengahan memasak karena kekurangan air, jadi seharunya saya tambahkan air sebelum memasak di rice cooker, dengan takaran memasak biasanya. 🔸Tapi jika terlanjur, nasi setengah matang tersebut bisa dikukus di api sedang ke kecil selama 30 menit. ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺
⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥NB: at first I was only using 1 L liquid from the coconut milk, but my rice cooker didn't want to work well because the unsufficient liquid in it. So I realized I need to add more water before turn on the rice cooker, and using the normal amount of water that I am usually using. 🔸But if like in my case already happen, that half cooked rice can be helped with steaming it on the low heat for 30 minutes.
