Ingredients

  • 12 ounces softened cream cheese
  • ½ cup sour cream
  • 1 (10-ounce can) drained rotel tomatoes with green chilis
  • ½ finely diced green bell pepper
  • 2 cups cooked and shredded chicken
  • 2 cups shredded Mexican cheese
  • 2 tablespoons Homemade Taco Seasoning
  • 2 tablespoons chopped green onion
  • 2 tablespoons chopped cilantro
  • 6 burrito-size flour tortillas

Steps

  1. In a large bowl or stand mixer, combine 12 ounces softened cream cheese, ½ cup sour cream, 1 (10-ounce can) drained rotel tomatoes with green chilis, ½ finely diced green bell pepper, 2 cups cooked and shredded chicken, 2 cups shredded Mexican cheese, 2 tablespoons Homemade Taco Seasoning, 2 tablespoons chopped green onion, and 2 tablespoons chopped cilantro. Using the mixer or hand mixer whisk together until smooth.

  2. Place ¼- ½ cup of the cream cheese mixture on each of the 6 burrito-size flour tortillas and spread, leaving about an inch from the edges. Roll up tightly and refrigerate for an hour.

  3. Slice into one-inch pinwheels and serve.
