Ingredients

6 servings
  • 2 tablespoons butter
  • One 16 ounce package frozen corn kernels
  • 1 medium red bell pepper, (ribs removed and chopped)
  • 1 large zucchini, (chopped)
  • 2 whole green onions, (chopped)
  • 1 medium jalapeño pepper, (seeded and chopped)
  • ½ cup bottled salsa
  • 2 tablespoons freshly chopped cilantro
  • salt and freshly ground black pepper, (to taste)

Steps

  1. Melt the butter in a large skillet over medium high heat. Add the corn, red bell pepper, zucchini, green onions and jalapeño and sauté until the vegetables are tender, about 7 minutes.

  2. Mix in the salsa and chopped cilantro. Stir until heated through, about 1 minute. Season to taste with salt and pepper.
