Marinated Tomatoes
Homemade marinated tomatoes are refreshing & full of flavor!

- 1 pound ripe tomatoes
- ½ white onion (sliced)
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic (sliced)
- 1 teaspoon chopped fresh parsley
- 1 teaspoon chopped fresh basil
- ½ teaspoon salt (or to taste)
- ½ teaspoon black pepper
Steps
Wash tomatoes and slice ¼ " thick.
Whisk the remaining ingredients and pour over tomatoes and onions in a shallow bowl or a freezer bag.
Marinate at least 2 hours or up to 2 days turning occasionally. Discard garlic before serving.
