Marinated Tomatoes – healthy tomatoes marinated with olive oil, balsamic vinegar and herbs.
Ingredients

- 1/4 cup olive oil
- 2 cloves garlic (minced)
- 1 1/2 tablespoons balsamic vinegar
- 1 teaspoon sugar
- 1/4 teaspoon salt
- Pinch cayenne pepper
- 1 teaspoon fresh thyme (chopped )
- 1 teaspoon parsley (chopped )
- 8 oz (230g) cherry tomatoes (cut into halves)
Steps
Combine the olive oil, garlic, balsamic vinegar, sugar, salt, cayenne pepper, thyme, and parsley in a bowl. Whisk until well mixed. Toss the tomatoes with the dressing, gently stirring to coat them evenly. Serve immediately.
