Marinated Mozzarella Melon Skewers

Ingredients
8 servings
- 1/3 cup basil pesto
- 2 cups fresh mozzarella balls
- 4 cups mixed melon balls
- 1 -2 cups fresh basil leaves
- 3 ounces prosciutto ((optional))
- 1/4 cup extra virgin olive oil
- 3 tablespoons balsamic or champagne vinegar
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 2 teaspoons fig preserves/jam
- kosher salt and black pepper
- 2 tablespoons chopped fresh basil
- 1 tablespoon chopped fresh mint ((optional) )
Steps

1. In a bowl, toss together the pesto and mozzarella balls. 2. To make the vinaigrette. Combine all ingredients in a glass jar and shake, or whisk to combine. Season with salt and pepper.3 To assemble, thread the prosciutto (if using), melon balls, cheese, and basil onto skewers. You can mix and match your skewers or make them all the same. 4. Arrange on a serving plate and serve drizzled with the vinaigrette.
