Mango, Black Bean and Goat Cheese Quesadilla
This unusual recipe is quick, easy and absolutely delicious!

Ingredients
4 servings
- 2 medium fat-free, low carb or regular flour tortillas
- 2 ounces crumbled goat cheese
- 1 medium mango ((peeled and sliced into small pieces))
- 4 ounces canned black beans, (drained and rinsed)
Steps

Coat both sides of the tortillas with cooking spray. Place one tortilla in a hot skillet to brown. Flip the tortilla and add the cheese, mango and beans on half of the tortilla; fold the tortilla over to cover the ingredients. Cook until the tortilla browns, then flip and cook the other side; remove the tortilla to a cutting board.

Repeat with the second tortilla and remaining ingredients.

Cut each tortilla into 4 wedges and serve immediately.
