Ingredients

  • butter
  • 1 cup granulated white sugar
  • ¼ cup water
  • ¼ cup light corn syrup
  • 1½ cups macadamia nuts, chopped ((6-ounce jar should be enough))
  • 1 tablespoon butter
  • ¼ teaspoon baking soda
  • sea salt, (optional)

Steps

  1. Butter a large baking sheet and set aside.

  2. In a large nonstick pan, combine the sugar with the water and corn syrup. Cook over medium-high heat, stirring occasionally, until golden brown.

  3. Stir in the nuts; cook, stirring constantly, until medium brown. Be careful not to burn! Remove from heat; quickly stir in the butter and baking soda. Pour onto the prepared baking sheet. Sprinkle with a little sea salt, if desired. Cool on a wire rack.

  4. When cooled, break into pieces. Store in a tightly covered container.
