Ingredients

  • 1/2 red onion (diced)
  • 1 1/2 cups cooked, cooled quinoa (see How to Cook Quinoa)
  • 1 15 - ounce can reduced sodium chickpeas (rinsed and drained)
  • 3 mini cucumbers (diced)
  • 1/3 cup lightly packed fresh mint leaves (chopped)
  • 1/4 cup chopped fresh parsley (leaves and tender stems)
  • 1/3 cup toasted pistachios (roughly chopped)
  • 1/3 cup feta cheese
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon honey
  • ½ teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Steps

  1. Place the red onion in a small bowl and cover with cold water. Let sit 5 minutes, then drain and set aside. (This softens the red onion's lingering afterbite).

  2. In a big bowl, place the quinoa, chickpeas, cucumbers, mint, parsley, pistachios, and feta.

  3. In a liquid measuring cup with a spout, stir together the dressing ingredients: olive oil, honey, salt, and pepper.

  4. Pour the dressing over the salad and toss to combine. Serve chilled or at room temperature.
