Ingredients

  • 8 ounces sharp cheddar cheese (shredded)
  • 3 tablespoons cold butter (cut into small pieces)
  • 1 tablespoon shortening
  • 1 teaspoon sea salt
  • 1 cup all-purpose flour
  • 2 tablespoons ice cold water

Steps

  1. In a food processor, add the cheese, flour, butter, shortening, and salt. Pulse several times to combine.

  2. Gradually add cold water until the dough forms a ball, you may not need all of the water. The dough should not be sticky. Form the dough into a 4-inch disc, wrap in plastic wrap, and refrigerate 30 minutes.

  3. Preheat the oven to 350°F and line a baking sheet with parchment paper.

  4. On a well floured surface, roll out the dough to ⅛-inch thickness. With a pastry wheel or a sharp knife, cut the dough into 1-inch squares and use a skewer or toothpick to poke a hole in the center of each.

  5. Bake for 19-23 minutes or until light brown at the edges. Transfer to a cooling rack and cool completely.
