Ingredients

8 servings
  • 6 quarts popped popcorn (about ¾ cup kernels)
  • 1 cup butter
  • ½ cup light corn syrup
  • 2 cups brown sugar
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 ½ cups pecans (or peanuts, optional)

Steps

  1. Preheat oven to 250°F.

  2. Melt butter, brown sugar, corn syrup and salt in a saucepan over medium heat. Bring to a boil and let simmer 5 minutes without stirring.

  3. Remove from heat and stir in vanilla and baking soda.

  4. Pour over popped corn (and optional mix-ins) and mix well to combine.

  5. Spread mixture over two 9x13 pans and bake 1 hour, stirring every 15 minutes.
