Ingredients

  • 4 cups mashed potatoes
  • ½ cup chopped ham
  • 2 cups shredded Mozzarella
  • 1 egg
  • ¼ cup all-purpose flour
  • 1 deseeded and minced jalapeño
  • 2 teaspoons minced garlic
  • ½ cup plain bread crumbs
  • 4 -6 tablespoons Oil for shallow frying
  • Sour Cream or Mayonnaise for serving

Steps

  1. In a large bowl add the 4 cups mashed potatoes, ½ cup chopped ham, 2 cups shredded Mozzarella, 1 egg, ¼ cup all-purpose flour, 1 deseeded and minced jalapeño, and 2 teaspoons minced garlic.

  2. Stir the potato mixture together until well combined, the mixture should be thick and should hold its shape. If it's too loose, add a tablespoon of flour at a time (this will depend on the consistency of your mashed potatoes)

  3. Use an ice cream scoop to scoop out the mixture and form it into patties about ⅓-inch thickness. Coat each cake evenly in the ½ cup plain bread crumbs and set aside.

  4. Heat 4-6 tablespoons Oil for shallow frying in a pan over medium-high heat and fry the patties in a single layer on each side for 3-4 minutes till golden brown on both sides.

  5. Serve hot with Sour Cream or Mayonnaise for serving.
