Ingredients

  • 1 8 -10" flour tortilla
  • 1 teaspoon butter
  • ⅓ cup shredded cheese (cheddar, Colby jack, Pepper jack, or Mexican cheese blend all work well)
  • 2 slices black forest ham (chopped into ½-inch pieces, about ¼ cup)
  • sour cream, ranch dressing, or salsa (for serving)

Steps

  1. Warm a nonstick skillet over medium-high heat. Lightly butter a single side of one tortilla with butter and place it in the hot pan. Sprinkle about 3 tablespoons of cheese on half of the tortilla, top with ham and the remaining cheese.

  2. Fold the tortilla over on itself and let it cook for 2-3 minutes. When the cheese has begun to melt and the bottom tortilla is browning slightly, flip the folded quesadilla over to cook the other side.

  3. Continue to cook until all the cheese has melted and the tortilla is crisp around the edges and deeply golden brown. Using a spatula, transfer the quesadilla back to a cutting board and cut it into wedges while hot. Serve warm.
