Ingredients

4 servings
  • 2 medium oranges, (peeled and diced (cut off any white pith))
  • 1 medium red bell pepper, (seeded and finely chopped)
  • ½ cup diced red onion
  • ¼ cup torn fresh mint leaves
  • 2 tablespoons red wine vinegar
  • sea salt and freshly ground black pepper, (to taste)
  • Four 6-ounce fresh tuna steaks
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon ground coriander

Steps

  1. In a medium bowl mix together the oranges, pepper, onion, mint and vinegar. Season with salt and pepper and set aside.

  2. Heat the grill to high-heat. Oil the grates generously with vegetable oil (not cooking spray), and let heat up. Rub each tuna steak with a little bit of olive oil, and then sprinkle with coriander, salt and pepper. Place the tuna steaks on the grill and cook 4 to 6 minutes, turning just once. It will still be pink in the center.

  3. Top with salsa, and serve.
