Ingredients

4 servings
  • 2 pounds salmon
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 avocado chopped
  • 1 Roma tomato chopped
  • ½ small red onion chopped
  • ½ cup corn
  • juice from 2 limes (about ¼ cup)
  • 2 tablespoons finely chopped cilantro
  • dash of salt

Steps

  1. In a small mixing bowl, combine 1 teaspoon salt, 1 teaspoon chili powder, 1 teaspoon paprika, 1 teaspoon onion powder, ½ teaspoon garlic powder, and 1 teaspoon black pepper.

  2. Rub 2 pounds salmon fillets with 1 tablespoon olive oil and rub with the spice mix.

  3. Grill the salmon on medium heat for about 3-5 minutes or until desired doneness.

  4. For the salsa, mix 1 avocado chopped, 1 Roma tomato chopped, ½ small red onion chopped, ½ cup corn, 2 tablespoons finely chopped cilantro, dash of salt, and juice from 2 limes in a small mixing bowl. Top the salmon with the avocado salsa.
