Greek Quinoa Salad
Fresh greek salad tossed with protein packed quinoa for the perfect meal!

- 1 cup quinoa (uncooked )
- 2 cups water (or broth)
- 1 pint cherry tomatoes (diced)
- ½ cup diced red bell pepper
- ½ cup diced green bell pepper
- ½ English cucumber (diced)
- ½ cup sliced black olives
- ¼ cup diced red onion
- 3 ounces crumbled feta cheese
- ⅓ cup Greek salad dressing (or homemade below)
- 1 tablespoon chopped fresh parsley
Steps
Prepare quinoa according to package directions. Cool.
In a large bowl, combine tomatoes, red and green peppers, cucumber, olives, red onion and feta cheese and dressing. Toss to coat evenly.
Add cooled quinoa and combine.
Garnish with fresh parsley on top.
