Ingredients

2 servings
  • 1 cup frozen sliced peaches ((frozen at the peak of ripeness* // 1 peach yields ~1 cup or 140 g))
  • 1/2 cup frozen pineapple chunks ((frozen at the peak of ripeness*))
  • 1 Tbsp fresh mint leaves
  • 2 Tbsp lime juice ((freshly squeezed // 1/2-1 lime yields ~2 Tbsp or 30 ml juice))
  • 1/3 cup ice
  • 2/3 cup water
  • 1/2 -1 Tbsp maple syrup ((depending on sweetness of fruit, or sub other liquid sweetener such as agave))
  • 4 -6 Tbsp light (white) rum ((optional // if omitting, add more water))

Steps

  1. To a high-speed blender, add all daiquiri ingredients (including the lesser amount of rum if you are using it) and blend on high for ~1 minute until smooth. Taste and adjust, adding more maple syrup to balance tartness or rum for a stronger drink.

  2. Divide between your favorite cocktail glasses and garnish the rim with a slice of peach or pineapple, a lime wedge, or fresh mint leaves, or add a cocktail umbrella! Soak in the vacation vibes and enjoy!

  3. Best when fresh. If there’s any leftover (we doubt it!), we suggest freezing in a popsicle mold.
