Frito Corn Salad
Frito Corn Salad combines sweet corn, fresh bell peppers, spicy jalapenos and of course crunchy Fritos all in a creamy dressing. This is the perfect potluck side dish or appetizer dip!

- 3 cups corn kernels (fresh off the cob, or two 12-14 ounce cans of corn, drained)
- ½ red bell pepper (diced ¼-inch)
- ½ g reen bell pepper (diced ¼-inch)
- ½ red onion (diced ¼-inch)
- 4 ounces diced jalapeños (drained, or 4 oz mild green chiles drained)
- ⅔ cup mayonnaise
- 2 teaspoons chili powder
- 1 ½ cups shredded cheddar cheese
- 5 ounces Fritos chips
Steps
Combine all ingredients except Fritos in a large bowl and mix well.
Just before serving, stir in Fritos.
Season with salt & pepper to taste.
