Ingredients

  • 1 tablespoon butter
  • ½ cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 medium jalapeno pepper, (seeded and minced)
  • 2 tablespoons all purpose flour
  • 3 cups 2% milk
  • 2 cups chopped roasted skinless, boneless chicken breasts
  • One 14.75-ounce can cream style corn
  • 1½ cups frozen corn kernels ((or 3 ears of fresh corn))
  • 1½ teaspoons chopped fresh thyme
  • ½ teaspoon salt
  • ⅛ teaspoon ground red pepper

Steps

  1. Melt the butter in a large pot over medium heat. Add the onion, celery, and jalapeño; cook for 3 minutes or until tender, stirring frequently.

  2. Add in the flour; cook 1 minute, stirring constantly. Stir in the milk and remaining ingredients.

  3. Bring to a boil, and cook until thickened (about 5 minutes.)
