Ingredients

6 servings
  • 4 -5 cups blackberries (fresh or frozen)
  • 3/4 cup white sugar
  • 2 tablespoons cornstarch
  • 1 cup quick oats
  • 1/2 cup Blue Diamond Lightly Salted Almonds (chopped fine)
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/3 cup butter (melted)
  • vanilla ice cream (to serve with (not optional...))

Steps

  1. Preheat the oven to 375 degrees F. Grease the sides of a square pan, either 8x8 or 9x9.

  2. If you are using frozen berries, drain them. (I drained mine until they were about halfway thawed. There was still quite a bit or moisture in them.) Drink up that juice, don't be shy now.

  3. Add berries to a medium bowl. Add white sugar and cornstarch and stir. Transfer the mixture to the square pan.

  4. In another medium bowl, combine oats, chopped almonds, brown sugar, and cinnamon.

  5. In a small bowl, melt the butter. Add the butter to the oats and stir.

  6. Cover the berries with the oat topping and spread around.

  7. Bake at 375 for about 25-30 minutes, or until lightly browned on the top.

  8. Serve with vanilla ice cream! Seriously. Don't skip it.
