  • 1 ounce Parmesan cheese (shaved with a vegetable peeler, see notes)
  • ¼ cup thinly sliced red onion
  • 1 tablespoon pine nuts (toasted, or toasted almonds)
  • ¼ cup vegetable oil
  • 1 ½ tablespoon red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon granulated sugar (or to taste)
