Ingredients

12 servings
  • 1 teaspoon olive oil
  • 1 cup onions (chopped)
  • ½ teaspoon kosher salt
  • ¼ cup gin (or vodka - whatever the alcohol is for your martini of choice!)
  • 2 cups plain whole milk Greek yogurt (don’t use fat-free here)
  • 2 tablespoons light mayonnaise
  • ½ cup chopped martini olives (plus more for garnish)
  • 2 teaspoons martini olive brine
  • ½ tsp fresh cracked black pepper
  • 1 teaspoon lemon zest
  • ¼ cup Gorgonzola cheese (or blue cheese, plus optional more for topping)

Steps

  1. Add olive oil to a small saute over medium heat; add onions & salt. Saute until browned but still with a bite. Add alcohol of your choice and cook out until almost dry. Set aside to cool.

  2. In a medium bowl combine Greek yogurt, mayonnaise, olives, olive brine, black pepper & sauteed onions, add gorgonzola.

  3. Spoon dip into a dish; top with lemon zest and olives.

  4. Serve with crudites and your favorite cracker or chip!
