Ingredients
- 7 siung Bawang merah
- 4 siung Bawang putih
- 6 Cabai keriting
- 2 sdm Minyak goreng (secukupnya)
- 1/2 sdt Garam
- 1 sdm Baking soda
- secukupnya Air

- 750 g r cumi segar
- 1 batang Serai (geprek)
- 3 Daun jeruk
- 1 buah Jahe (geprek & ikat)
- 2 sdm Saus tomat
- 2 sdm Sambel Cap Ibu Jari (saya saus sambal biasa)
- 2 sdm Saus tiram
- 100 ml Air
- 2 sdm Air asam jawa
- 1 Cabai merah (iris)
- 1 batang Daun bawang (iris)
- 1 buah Bawang bombai (iris)
- 1 sdt Garam
- 1 sdt Gula
- 1/2 sdt Merica
- 7 shallots
- 4 G arlic cloves
- 6 Red chilies
- 2 tbsp Cooking oil / as needed
- 1/2 tsp Salt
- 1 tbsp Baking soda
- Water as needed
- 750 g r fresh squid
- 1 Stalk lemongrass (bruised)
- 3 Kaffir lime leaves
- 1 piece Ginger (bruised and tied)
- 2 tbsp Tomato sauce
- 2 tbsp Chili sauce (I used regular chili sauce)
- 2 tbsp Oyster sauce
- 100 ml Water
- 2 tbsp Tamarind water
- 1 Red chili (sliced)
- 1 Scallion (sliced)
- 1 Onion (sliced)
- 1 tsp Salt
- 1 tsp Sugar
- 1/2 tsp White pepper powder
Steps
🟨Pisahkan kepala dan badan cumi, buang tulang dan kotoranya (tinta, mata) 🔸Cuci bersih hingga tidak berlendir, lalu potong cumi sesuai ukuran yang diinginkan, (1-2 cm). ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Separate the head and body of the squid, remove the bones and internal parts (ink and eyes). 🔸Wash thoroughly until no slime remains, then cut into 1–2 cm rings.
🟨Rendam cumi dengan air, baking soda, dan garam selama 15 - 20 menit. ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Soak the squid in water, baking soda, and salt for 15–20 minutes.
🟨Buang air rendaman, lalu cuci cumi dibawah air mengalir hingga benar-bear bersih. Tiriskan. ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Discard the soaking water. Rinse the squid under running water until completely clean. Drain.
🟨Siapkan bumbu halus, lalu blender semua hingga halus. ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Blend all spice paste ingredients until smooth.
🟨Tumis bumbu halus sebentar. 🔸Masukkan bawang bombai, cabai merah, serai, daun jeruk, dan jahe. 🔸Masak hingga bawang bombai sedikit layu. 🔸Masukkan air, saus tomat, saus tiram, saus sambal dan air asam jawa, 🔸Aduk hingga tercampur rata. ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Sauté the spice paste briefly. 🔸Add sliced onion, red chili, lemongrass, kaffir lime leaves, and ginger. 🔸Cook until the onion softens slightly. 🔸Add water, tomato sauce, oyster sauce, chili sauce, and tamarind water. 🔸Stir until well combined.
🟨Di penggorengan lain, panaskan minyak. 🔸Setelah benar-benar panas, goreng cumi sebentar (1-2 menit agar tidak alot). ❗❗💡Tips : masukkan sedikit tepung ke minyak agar tidak meletup-letup. ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥In a separate pan, heat oil. 🔸Once very hot, fry the squid briefly (1–2 minutes only to prevent toughness). ❗❗💡 Tip: Add a little flour to the oil to reduce splattering.
🟨Masukkan cumi ke saus. 🔸Tambahkan garam, gula, dan merica. 🔸Aduk dan masak hingga matang. 🔸Sebelum kompor dimatikan, masukkan daun bawang, lalu masak sebentar. ⸺⸺⸺⸺⸺⸺⸺⸺⸺⸺ 🟥Add the fried squid into the sauce. 🔸Season with salt, sugar, and pepper. 🔸Cook until fully done. 🔸Before turning off the heat, add scallions and cook briefly.
