Ingredients

4 servings
  • 1 teaspoon olive oil
  • ⅔ cup diced onions
  • 3 to 4 cups fresh baby spinach leaves
  • 1 medium garlic clove, (minced)
  • 3 large eggs
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon regular Spike seasoning ((or a similar seasoning))
  • ½ tablespoon Worcestershire sauce
  • 1 cup low fat ricotta cheese
  • 2 ounces feta cheese crumbles
  • ¼ cup grated Swiss cheese
  • ¼ cup grated Parmesan cheese

Steps

  1. Preheat the oven to 350°F. Spray 9-inch glass or ceramic pie plate with cooking spray.

  2. Heat oil in a large nonstick skillet. Add the onions to the hot oil and sauté for 3 minutes.

  3. Add the spinach and garlic and sauté for another 2 minutes, or until the spinach is completely wilted. Remove from heat.

  4. In a medium bowl, whisk the remaining ingredients together. Stir in the spinach mixture and then pour into the pie plate.

  5. Bake on the center rack of your oven for 35 to 40 minutes. Let sit for about 5 minutes before slicing.
