Ingredients

4 servings
  • 1 tablespoon extra virgin olive oil
  • 1 pound lean ground beef (90/10)
  • 1 teaspoon kosher salt (divided)
  • 2 medium carrots (¼-inch diced (about 1 cup))
  • 1 small yellow onion (finely chopped (about 1 cup))
  • 1 small red bell pepper (¼-inch diced (about 1½ cups))
  • 2 cloves garlic (minced (about 2 teaspoons))
  • 2 teaspoons chili powder
  • 2 tablespoons tomato paste
  • 1 tablespoon Dijon mustard
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon red wine vinegar
  • ¾ cup low-sodium beef broth
  • 4 Kaiser rolls (or rolls of choice)
  • Optional for serving: Sliced cheddar cheese, pickles

Steps

  1. Heat the oil in a large skillet over medium-high heat. Add the ground beef and cook, undisturbed, until browned on one side, about 4 minutes. Break the beef into small crumbles and continue to cook until no longer pink, about 3 more minutes. Sprinkle with ¼  teaspoon salt. Transfer to a 4-to 6-quart slow cooker.

  2. To the now-empty skillet, add the carrots, onion, bell pepper, and ¼ teaspoon salt. Cook, stirring periodically, until softened, about 5 minutes. Stir in the garlic and chili powder until fragrant, about 1 minute. Transfer to the slow cooker.

  3. Add the tomato paste, mustard, ketchup, Worcestershire sauce, brown sugar, vinegar, broth, and remaining ½ teaspoon salt to the slow cooker and stir to combine. Cover and cook on low heat for 4 hours or high heat for 2 hours, until the vegetables have softened.

  4. Serve on Kaiser rolls with toppings of choice.
