  • ½ cup unsalted butter, (cubed)
  • 3 tablespoons honey
  • 2 teaspoons minced garlic
  • 1 teaspoon chopped parsley, (plus more for garnish)
  • ½ teaspoon salt
  • 2 -3 cracks freshly ground black pepper

Steps

  1. Peel and cut the 2 pounds whole carrots into 1-1 ½ inch pieces and place them in the bottom of a 4-quart crockpot.

  2. Add ½ cup unsalted butter,3 tablespoons honey, 2 teaspoons minced garlic, 1 teaspoon chopped parsley,½ teaspoon salt, and 2-3 cracks freshly ground black pepper on top.

  3. Cook on HIGH for 1 ½ hours, or on LOW for 2 ½-3 hours, or until the carrots are fork tender. Top with a little more chopped parsley before serving.
