Ingredients

4 servings
  • 1 cup couscous
  • 1 tablespoon olive oil
  • 4 large shallots, (peeled and thinly sliced)
  • ½ cup chopped fresh parsley
  • 1½ tablespoons freshly squeezed lemon juice
  • Kosher salt and freshly ground black pepper, (to taste)

Steps

  1. In a medium saucepan, cook the couscous according to package instructions. Fluff with a fork and transfer to a serving dish.

  2. In a medium skillet, heat the oil at medium high heat. Add the shallots and cook, stirring frequently, until softened and slightly browned, about 3 to 5 minutes.

  3. Add to the bowl with the couscous, along with the parsley and lemon juice. Toss to combine, and season with salt and pepper.
