Cottage Cheese Pizza Bowl

- 8 ounces Italian sausage
- ¼ yellow onion (diced)
- ½ cup green bell pepper (diced)
- ½ cup mushrooms (sliced)
- 1 teaspoon Italian seasoning
- 2 cups cottage cheese (or ricotta cheese)
- 1 egg
- ¼ teaspoon dried oregano
- 1 cup pizza sauce
- ¼ cup pepperoni slices
- 1 cup mozzarella cheese (shredded)
- 2 tablespoons Parmesan cheese (shredded)
Steps
Preheat the oven to 450°F. Grease four small oven-safe bowls or a 9-inch pie plate.
Heat a non-stick skillet over medium-high heat. Add the sausage and cook until browned. Drain any fat.
Add the onion, bell pepper, mushrooms, and Italian seasoning. Cook until tender, about 5 minutes. Set aside to cool.
In a small bowl, combine cottage cheese, egg, and oregano.
Spread the cottage cheese mixture into the prepared bowls. Top with pizza sauce and the cooked sausage mixture.
Evenly divide the mozzarella cheese, Parmesan, and pepperoni over the top of each bowl.
Bake 15 to 18 minutes or until cheese is browned and bubbly. Cool 5 minutes before serving.
