Cheese Popovers

These are simple to make, and wonderful with soup!

Ingredients

12 servings
  • 1½ tablespoons salted butter
  • 3 large eggs
  • 1 cup milk
  • ⅔ cup all-purpose flour
  • 1 pinch salt
  • ¼ teaspoon paprika
  • 1 cup freshly grated Parmesan cheese

Steps

  1. Preheat the oven to 425°F. Spray 12 small ramekins or popover tins with nonstick spray.

  2. Melt the butter in a small glass bowl in the microwave.

  3. In a large bowl, beat the eggs with an electric mixer until well blended, then beat in the milk and melted butter.

  4. Sift together the flour, salt and paprika, and then beat the flour mixture into the egg mixture. Stir in the cheese.

  5. Fill the prepared pans half-full with batter. Bake 20 to 25 minutes until golden. Do not open the oven door during baking or the popovers will fall. Serve warm.
