Ingredients

2 servings
  • 2 large flour tortillas
  • 4 to 6 ounces charcuterie meat (about 1 cup chopped)
  • 6 to 8 ounces assorted cheese
  • 2 tablespoons finely chopped olives (optional)
  • 1 tablespoon olive oil
  • honey (for serving, optional)
  • fresh herbs (for garnish, optional)

Steps

  1. Place the charcuterie meat on a large cutting board and chop into small pieces.

  2. If the cheese is in large pieces, grate it with a cheese grater. If it is smaller pieces, finely chop it with a knife.

  3. Heat a small skillet over medium high heat. Add the meat and cook until crisp while stirring, about 3 to 4 minutes.

  4. On one half of the tortilla, add half of the cheese, half of the crisped meat and 1 tablespoon of olives if using. Fold the tortilla overtop and brush both sides lightly with olive oil. Repeat with the remaining ingredients.

  5. Heat a large 12-inch skillet over medium heat. Place both quesadillas in the skillet and cook for 3 to 4 minutes, or until browned and crispy and the cheese has started to melt. Flip the quesadillas over and cook for an additional 2 to 3 minutes or until crisp.

  6. Remove from the skillet and transfer to a cutting board. Cut into 3 triangles. Drizzle with honey and garnish with fresh herbs if desired.
