Ingredients

6 servings
  • 1 large head cauliflower, (cored and cut into small florets)
  • 1 cup finely chopped celery
  • ⅓ cup finely chopped red onion
  • ½ cup mayonnaise ((regular or light))
  • 1 tablespoon yellow mustard
  • 1½ teaspoons apple cider vinegar
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder
  • sliced green onion, (for garnish (optional))

Steps

  1. Fill a pot with water and bring to a boil. Add the cauliflower, reduce heat and simmer until tender- about 5 minutes. You want it to be tender enough to slide a fork through, but not mushy. Alternately, you can steam the cauliflower. Drain, and let cool. Cut into bite-sized pieces and put in a large bowl.

  2. Add the celery and onion to the bowl too.

  3. In a small bowl, whisk together the mayonnaise, mustard, apple cider vinegar, salt, pepper and garlic powder. Add the dressing to the bowl, and toss to combine.

  4. Refrigerate until ready to serve.
