Caprese Sandwich with Basil Pesto
A Caprese Sandwich with Basil Pesto is a thick ciabatta bread stuffed with layers of tomato, mozzarella, and fresh pesto. Add a drizzle of a balsamic glaze and you will have a homemade sandwich that is better than anything you could buy at a restaurant!

Ingredients
- 2 cups fresh basil
- ½ cup freshly grated parmesan
- 3 g arlic cloves
- ¼ cup pine nuts
- ½ olive oil
- 4 ciabatta buns, (or bread of choice)
- 8 slices mozzarella cheese (¼ inch thick)
- 1 slice d tomato (¼ inch thick)
- balsamic glaze
Steps

In a food processor combine 2 cups fresh basil, ½ cup freshly grated parmesan, 3 garlic cloves, ¼ cup pine nuts, and ½ olive oil. Pulse until the olive oil is mixed in and the pesto looks uniform.

Assemble the sandwiches, slice the 4 ciabatta buns, in half and spread the pesto on one side. Layer the 8 slices mozzarella cheese and 1 sliced tomato and drizzle with balsamic glaze.
