Buttermilk Mashed Potatoes
Creamy buttermilk mashed potatoes with fresh chives is a lighter side dish for a healthier holiday.

Ingredients
5 servings
- 2 lbs yukon gold potatoes (peeled and cubed, about 6 to 7 medium)
- 3/4 cup low fat buttermilk (plus 2 tablespoons)
- 1 tablespoon whipped butter
- kosher salt (to taste)
- dash of fresh ground pepper
- 1/4 cup fresh chives (chopped)
Steps

Put potatoes and in a large pot with salt and enough water to cover. Bring to a boil.

Cover and reduce heat. Simmer for 20 minutes or until potatoes are tender.

Drain and return potatoes to the pot.

Add buttermilk, butter and remaining ingredients. Mash until smooth. Season with salt and pepper to taste.
