Instructions

  1. Boil the meat with bay leaves, lime leaves, lemongrass and galangal until tender. Remove the meat and drain. Take 200 ml of the boiled broth and set aside. Cut the meat into pieces and set aside.
  2. Heat oil, saute ground spices until fragrant and cooked.
  3. Pour in the broth that was set aside earlier. Stir well.
  4. Add the meat, tofu, eggs, cowpeas and melinjo skin. Stir well.
  5. Add coconut milk and cayenne pepper. Cook, stirring frequently, until the coconut milk has reduced some and the spices are absorbed. Correct the taste. Lift.
  6. Ready to be served.
  7. 1. If using dried cowpeas, soak them for at least 1 hour then boil until soft. 2. To make it faster and more practical, beef can be boiled using a Vicenza Pressure Cooker VP308/8L pressure cooker (See Lazada DISCOUNT). By using this pressure cooker, the meat will become tender quickly but will not lose its delicious distinctive texture.
