  • 2 medium garlic cloves, (peeled)
  • 1 cup (4 ounces) crumbled blue cheese
  • ½ cup 1% low fat milk
  • 2 tablespoons chopped fresh parsley
  • ¼ teaspoon freshly ground black pepper
  • kosher salt, (to taste)

Steps

  1. Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil; cook 15 minutes or until tender. Drain.

  2. Place the potato mixture and the remaining ingredients in a large bowl. Mash to desired consistency. Add salt, to taste.
