  • 4 cups water
  • 2 bay leaves
  • 1/2 red onion (chopped)
  • 1/3 cup Italian parsley (finely chopped)
  • 1/4 cup + 2 tablespoons fresh lemon juice (from 1 1/2 lemons, or more to taste)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • Optional: add diced carrots (celery, feta cheese)
